You are hungry, and the boulangerie welcomes you in with its symphony of crusts crackling, the old man at the till gives you a look full of buttery dreams; this is it, now don’t mess up your order - “un croissant et un café crème s’il vous plaît”. Parfait.

    It is widely understood that the croissant of today is a descendent of the ‘kipferl’ (or kipfel) - an Austrian, crescent-shaped pastry that resembles a thinner, denser croissant made with a generous amount of butter and often served topped with sugar and almonds. According to legend, the kipferl originated in the late 17th century as a celebration of the victory over the Ottoman Empire at the siege of Vienna.
